Vegetable Fried Rice

I always like to chop vegetables for this dish since it comes with colorful combination of carrots, beans, cabbage, capsicums and spring onions. I have prepared this dish many times at my home without adding soy sauce as I found soy sauce changes the color of the dish. However this time I have tried this dish by adding light soy sauce. I believe that soy sauce will add a unique taste to this dish. . Also I didn't add beans as an ingredient. You are welcome to add beans when u prepare this dish. :-)

Basmati Rice - 1 cup
Vegetables - 1 cup finely chopped, half boiled(i added carrot,cabbage,capsicum and spring onions)
Olive Oil - 3 teaspoon
Pepper powder - 1 teaspoon
Ginger, Garlic Paste - 1 teaspoon
Green Chilli - 1 no, minced
Salt - to taste
Light soy sauce - 1 teaspoon


1) Boil/Cook the rice as separate grains and allow it to cool for some time. Always use cold rice for preparing this fried rice. Chop vegetables to a small size and half cook them in microwave.

2) Take a Frying pan and add olive oil in it.
3) When oil is hot, add root part of the spring onions(white part) and saute it.

4) Add Ginger Garlic paste and minced green chilli. Saute for a minute.

5) Add half boiled vegetables (don't add all the spring onions, save some so that it can be used while garnishing) and toss them well for few  minutes.

6) Add salt, pepper and toss again.

7) Add soy sauce and toss them again for a minute.
8) Add the cooked cold rice and mix it well.

9) Turn the flame to low and toss well for a minute.

10) Garnish the dish with spring onions

11) Serve this dish hot with any sauce of your choice.
